33 Crock Pot Recipes You Can’t Live Without

Whether it’s pot roast, spicy meatballs, chili, or even chocolate pudding, the crock pot does just about everything. I use it at least once a week and will be forever grateful to my Mother for giving me my first crock pot when I graduated from college. Granted, there have been a few failures–usually due to forgetting I had something in the crock pot and arriving a few hours later than planned to a pot of mush–but there have been so many more delicious successes. So today’s post is a fun tribute to the crock pot and all of the yummy things you can do with it. Before I get started, I get this question a lot so I’ll go ahead and answer it now: What crock pot do I personally use and why? I have the Hamilton Beach Set ‘n Forget 6-Quart Programmable Slow Cooker. crockpotI’ve owned a couple over the years but this is my favorite for a couple of reasons. 1) It has little clamps so I can seal down the lid and not worry about sloshing if I’m transporting food in my car. Been there, done that, and it’s no fun cleaning chili out of the floor of your car in the freezing cold. 2) It’s programmable so for recipes that call for 8 hours of cooking time it means I don’t have to rush home because the timer setting just switches to WARM when it’s done. 3) It has a meat thermometer/probe so you can set the crock pot to switch to warm as soon as it reaches a certain internal temp. I actually first gave this crock pot to my Mom as a present but was so impressed by it that I scooped one up for myself.

Onward we go to 33 amazing recipes!

Crock Pot Cheesy Chicken Tortilla Soup

platedsoupChicken Tortilla Soup is about as good is it gets on a cold winter night. It’s creamy, spicy, zingy, and cheesy, with every spoonful. In my opinion, The Cheesecake Factory makes the absolute best Chicken Tortilla Soup so they were my inspiration for this homemade version and I think this recipe hits the nail on the head. What’s more, it’s a perfect recipe for your crock pot or slow cooker. There are a ton of chopped veggies in this recipe so I strongly recommend busting out your food processor.

Crock Pot Cheesy Chicken Tortilla Soup
Serves 8

  • 1 1/2 pounds skinless chicken thighs (The flavor of bone-in meat is always so much better but if you prefer boneless then go with 1 pound)
  • 3 ribs of celery, finely diced
  • 2 large carrots, finely diced
  • 1 medium onion, finely diced
  • 4 cloves garlic, minced
  • 1 (14-ounce) can diced tomatoes with green chilis
  • 1 (10-ounce) package frozen or canned corn
  • 1 fresh poblano pepper, seeded and minced
  • 1 fresh jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, finely chopped
  • 1 teaspoon ground cumin
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 2 cups water
  • 1 lime, zested and juiced
  • 1 (10.5 ounce) can chicken broth
  • 1 pint fat-free half and half (If you really want the real thing, go for it, but fat-free tastes just as good in this recipe and that means you can go back for seconds!)
  • 12 ounces Monterey Jack cheese, shredded (Plus extra for garnish!)
  • 6 corn tortillas, cut into strips
  • 1 tablespoon vegetable oil

Directions:

1. Lay the chicken thighs on the bottom of the crock pot. Layer celery, carrots, onion, garlic, tomatoes, corn, peppers, spices and seasonings on top.

2. Cook for 6-8 hours on LOW or 3-4 hours on HIGH. About 30 minutes prior to serving, switch the crock pot to warm and remove chicken and set aside to cool so you can shred it.

3. Heat a large skillet to medium high and add the vegetable oil. Add the tortilla strips and fry until nice and crispy. Remove from oil onto a plate lined with paper towels. Set aside.

4. Remove chicken from the bones and shred. Add back to the pot and stir.

5. Ladle up bowls of soup and garnish cheese and tortilla strips. I also like to add more chopped cilantro, sour cream, or avocado to my bowl. When serving for a group, I’ll fill up bowls with all of these ingredients and let people customize their soup. Lots of fun and so good! Enjoy!

Avgolemono Greek Chicken Soup

This weekend was Charleston’s annual Greek Festival. It’s a great family event, filled with dancing, history lessons, vendors selling crafts and other goods, and delicious Greek delights. As you can imagine, it’s one of my favorite festivals. Sadly, we had a busy weekend so we weren’t able to squeeze it in this year. I was pretty bummed out but cheered myself up by recreating my favorite dish that I typically only get to enjoy once a year at the festival–Avgolemono. It’s basically a Greek Chicken Soup but has this amazing explosion of flavors in each spoonful. It’s unusual because it has an intense lemon flavor and a velvety, almost custard-like texture. May sound a bit odd but that combination of lemon, rice, chicken and veggies is phenomenal and every time I inhale a bowl I promise myself that I’m going to make it. I discovered you can buy it by the can online but I had that promise hanging over my head so I peeled myself off the couch and got into the kitchen. After consulting several recipe and travel websites, and a friend’s Yiayia, I decided to give it a whirl and it turned out beautifully! I didn’t want to spend a whole Sunday in the kitchen so I simplified a lot of the steps (Sorry, Yiayia!) to be more realistic to my busy lifestyle. I also thought it might be an interesting change to try orzo instead of rice. You can stick with rice if you prefer though. I hope you enjoy!

Ingredients:

  • 1 T. extra virgin olive oil
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1/2 cup carrot, minced
  • 1/2 cup celery, minced
  • 8 cups of chicken broth
  • 1/2 cup of fresh lemon juice
  • 2 chicken breasts
  • 1/2 cup of orzo, uncooked
  • 2 T. flour
  • 1 T. butter, melted
  • 4 egg yolks
  • Salt & Pepper
  • Fresh chopped parsley
  1. In a large pot, saute onion, garlic, carrots, and celery until softened. Add chicken broth and lemon juice and bring to a boil.
  2. Reduce heat to medium high and add chicken breasts. Let cook for 15 minutes or until chicken is cooked. Remove chicken to cool and reduce liquid to simmer.
  3. Add orzo
  4. Mix melted butter and flour and add to the pot.
  5. In a large bowl, beat the egg yolks. Gradually add in some of the hot liquid from the pot to the egg mixture, beating vigorously in between so you bring it up to temperature slowly without the eggs scrambling. You’ll end up adding about 2 cups of liquid in the end.
  6. Add the egg yolk mixture to the pot and stir. Season with salt and pepper.
  7. Shred chicken and add back to the pot.
  8. Let simmer for a few minutes until orzo has fully cooked.
  9. Garnish with chopped parsley and enjoy!

If you really want to go Greek, you can also serve with stuffed grape leaves! Yummy!
